One major perk of shopping at the Haile Farmers Market is that customers can learn the story behind their food. Todd Jensen from Beaucoup Garlic wants you to know that there are no hidden ingredients in his six varieties of marinara sauces. “There’s no sugar added to them, and they are low in cholesterol and sodium,” he said. “Sweet tomato basil is our best selling sauce.”

Along with marinara sauces, Beaucoup Garlic also specializes six salsas and six aiolis available for customers to sample at market. All of the sauces are made in Ocala in a commissary kitchen, and because they use local products, the sauces are branded with the Fresh from Florida label.

And what exactly is aioli, you ask? To make it, garlic is mashed up and then whipped in oil with spices like chile pepper and lemon, or herbs de provence. “You can use aiolis on meats,” Todd said. “Just baste meat in aioli and broil it up, it’s wonderful."
